Debbie Mumford - Making Salmon Balls

Leon - Ok so here we are in the kitchen. I'm here with Debbie and five amazing assistants. We're going to be making salmon Herb Balls, salad and
potato rosti. Let's get started.

Debbie
- OK. I've wiped down the surface, nice and clean. We've all washed our hands.

Leon
- Hands up, there we go.

Debbie
- OK let's make a start, we've got some salmon which I've blitzed down. Nice and fine.

Leon
- So that's raw salmon?

Debbie
- Yep that's raw salmon yeah.

Leon
- OK yeah.

Debbie
- I've got coriander and flat leaf parsley which I've chopped.

Child
- What does that make it taste like?

Debbie
- That would give it a nice flavour, would that, OK? And then I've got salt and pepper and cumin to add to it as well, just to add to the flavour. Then give it a good stir up.

Leon
- Mix it up nicely, it's not ready to eat yet though.

Debbie
- And then take a small amount and make a ball. Do you want to have a try and make a salmon ball? Just take that small amount, that's it.

Child
- All of it?

Debbie
- Yes, all of that, that's it and then roll it up, all of that and then roll it just like mine. OK.

Leon
- Look at that. True professional. Have you done that before?

Child
- (shakes head)

Leon
- Oh, there you go.

Debbie
- That's it, give it a good roll and then pop it on the tray so that will be ready for baking. Well done.

Leon
- Excellent.

Debbie
- Have a go? We'll do one more I think, there we go. Is it good?

Child
- It's squidgy.

(Laughter)

Leon
- Squidgy, like playdoh.

Debbie
- That's it.

Leon
- There you go, expert rolling.

Debbie
- Last one, there you go, OK, roll it up.

Child
- It feels a little bit hard and a little bit soft because all the...

Debbie
- The parsley and coriander.

Child
- Parsley. It's a little bit heavy.

Leon
- Ok well done. That's the balls done, they've got to go in the oven in a second, and what comes next?

Debbie
- I'm going to brush the tomatoes with balsamic vinegar and they can go in the oven to cook as well.

Leon
- Great.
