Debbie Mumford - Making Butternut Squash Cakes

Leon - OK, so who here has a sweet tooth? I certainly have! Well this is my favourite bit, in time for dessert. Here are the ingredients, what have we got?

Debbie - Right, we have plain flour, brown sugar, eggs, cinnamon and mixed spice.

Leon - Nice, I love cinnamon, does anyone else like cinnamon?

Children - Yeah, I like orange, is that custard, it looks like custard.

Debbie -  Vegetable oil and cooked and mashed butternut squash.

Children - What does it look like when it's all together?

Leon - What altogether or mixed up together?

Children - No like when it wasn't grated like this.

Leon - So this is a butternut squash, well half of one as the other half is in there, have a little look and see what it smells like.

Children - It's really cold.

Leon - Yeah it's out of the fridge.

Children - It smells really strong and smells like an orange.

Leon - It looks a bit like an orange doesn't it. It's interesting putting a vegetable in a dessert isn't it?

Children - Yeah.

Leon - I am looking forward to tasting it.

Children - Are we now putting all of that into the bowl?

Debbie - Yep, we are going to start making the muffins, so the flour, brown sugar, eggs.

Children - They look like a pair of eyes

Leon - Yeah they do look like a pair of eyes.

Children - Why do you have to put the egg into it?

Debbie - Egg helps it to rise and makes it all light and fluffy. Cinnamon and mixed spice, vegetable oil and butternut squash. The magic ingredient, there she is.

Leon - So you mix by hand or do you put it in a mixing machine?

Debbie - You can do either, mix by hand or with a machine.

Leon - It's good for the muscles though mixing by hand.

Debbie - There you go, I'm going to pass it on so you can all have a go, give it a good mix.

Leon - It does smell lovely, you can't eat it yet though can you?

Debbie - No not yet.

Children - No because there is egg in it.

Leon - That's right.

Children - You can eat egg on your own though.

Leon - You're not meant to though, you are definitely meant to cook eggs.

Debbie - Right, do you want to pass it on so everyone has a go, give it a good stir.

Children - It looks quite thick

Debbie - Yeah, it's meant to.

Leon - It looks a good colour though doesn't it?

Children - It looks lovely.

Leon - Doesn't it smell nice too? I can smell the cinnamon.

Children - The cinnamon - it is quite strong.

Leon - Have you done that before, the mixing?

Children - Yeah.

Leon - OK, so that is already mixed and you have the muffin tin, so what do we do now?

Debbie - We are going to pop some of the mix into each compartment, I am going to pass this along, so if you can finish this off for me, OK.

Leon - I don't know about anyone else but that is making my stomach rumble, I can't wait to try one when they are cooked.

Leon - Anyone else?

Children - Yeah.

Leon - So, all fully loaded, ready for the oven.

Debbie - Yep, all ready to cook.

Leon - OK, so let's do it
